How do I model in the Serious Modeller?


You don't, you can't model in the Serious Modeller, you can just open models in it, look at them, and re-texture it.

A more appropriate name will be the Serious Models Compiler. You must use an external software in order to build the models themselves. Some of the more popular titles are 3D Studio Max, MilkShape3D, and Maya3D.
