It should only need one mask texture, then you painting the different layers on it, which correspond to:

layer 1 - default ("black")
layer 2 - R channel
layer 3 - G channel (I might be wrong about these 3 layers, forgot to check, but they are the RGB channels)
layer 4 - B channel
layer 5 - A channel (only if your mask texture is translucent)

I do recommend also painting a shade texture, as it makes terrains look a whole lot better, with you painting lighter or darker colors on it (but you'll need experience with it. experiment with the colors).

As for original terrains, if you mean those background mountains, those weren't made with the in-editor displace tool, that's why they have a different polygon structure.
